Mardi Gras is February 17, 2015. The food for a Mardi Gras party should be fun, festive, and colorful. Why not have a potluck with the neighbors? Open the garage door, open the ping-pong table for a serving table, decorate the garage with colored beads and streamers, and feast! Ask your guests to bring their own lawn chairs and gather ’round for an easy, low impact celebration.

And don’t forget the chow. Here are a few recipes that will make your garage party shine!

Your Mardi Gras Menu:

Stuffed Chicken Breasts

6 boneless, skinless chicken breasts

8 ounces feta cheese, crumbled

3 cups chopped fresh spinach leaves

1/3 cup oil-packed sun-dried tomatoes, drained and chopped

1 teaspoon minced lemon peel; 1 teaspoon basil

1/4 teaspoon garlic powder

1/4 teaspoon paprika

1 dash black pepper

1 can (15 ounces) diced tomatoes, undrained

1/2 cup oil-cured olives hot cooked polenta or steamed rice

Place chicken breast between two pieces of plastic wrap. Pound breast with tenderizer mallet until 1/4 inch thick. Repeat with remaining chicken. Combine feta, spinach, sun-dried tomatoes, lemon peel, and spices in bowl. Lay pounded chicken on table, smooth-side down. Place two tablespoons of feta mixture on wide end of the breast. Roll tightly. Repeat with remaining chicken. Place chicken, seam-side down, in slow cooker. Top with diced tomatoes with juice and olives. (If pitted olives, add to slow cooker in the last hour of cooking.)

Cover. Cook 5 1/2 to 6 hours on low.

Serve with polenta or rice.

Italian Beef

1 packet of Italian dressing mix

1 (15 oz.) can of beef broth

3 lb. pot roast

Stir together dressing mix and beef broth in a baking dish. Add meat and cover. Bake at 250 for 5 hours (or in a crock pot on low for 5 hours). Serve atop hot noodles or use for sandwiches.

Cornbread

2 boxes of corn muffin mix

1 box of yellow cake mix

Make the recipes as directed on the boxes. Mix together. Pour in a 9×13 pan. Bake for 30 minutes at 350.

Zucchini Chips

1 large zucchini

1 tablespoon olive oil

1 dash sea salt

1 dash pepper

2 dashes paprika

Cut a zucchini into thin slices. Toss in olive oil, salt, and pepper. Sprinkle with paprika and bake at 450°F for 25 to 30 minutes.

Party Punch

1 gallon lemon-lime soda

1 gallon Hawaiian Punch (Juicy Fruit Red)

1 quart rainbow sherbet

Mix soda and punch in large punch bowl. Top with sherbet and serve.

Chocolate Lasagna

1 package Oreo cookies

6 tablespoons butter, melted

1 8-ounce package cream cheese, softened

1/4 cup sugar

2 tablespoons milk

1 12-ounce tub Cool Whip, divided

2 3.9-ounce packages Chocolate Instant Pudding.

3 1/4 cups milk

1 1/2 cups mini chocolate chips

Crush cookies in food processor or place them in a large ziplock bag and smash them with a rolling pin. Transfer the Oreo crumbs to a large bowl. Stir in melted butter. Place the mixture in a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan. Put pan in the refrigerator while working on the additional layers.

Mix the cream cheese until light and fluffy. Add in sugar and two tablespoons of milk; mix well. Stir in 1 1/4 cups Cool Whip. Spread this mixture over the crust.

In a bowl, combine chocolate instant pudding with 3 1/4 cups milk. Whisk until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer.

Allow the dessert to rest for about 5 minutes, then spread the remaining Cool Whip over the top. Sprinkle mini chocolate chips over the top.

Chill in the freezer for 1 hour, or the refrigerator for 4 hours, before serving.
